“Pennyroyal Barrel Co. Makes New Year’s Transition to Pennyroyal Distillery”
COLUMBIA, KENTUCKY (January 1, 2024) Ringing in the new year, the Pennyroyal Barrel Co. of Columbia, Kentucky is transitioning from Pennyroyal Barrel Co. to Pennyroyal Distillery. Pennyroyal was originally introduced in July of 2023 as a whiskey incubator assisting in sourcing whiskey for small to medium sized third party brands – providing single story rickhouse storage, a storefront to purchase each brand’s products and apparel, a tasting room in a repurposed grain silo, a single barrel selection room and a wooded amphitheater with walking paths. This unique approach to a campus built for independent brands as an incubator was conceived to allow the brands to curate their own unique opportunities to create brand engagement with their customers. According to Pennyroyal, a number of brands have expressed interest in creating a “home” at the Pennyroyal campus but sourcing and distillation were always topics of great discussion. The team at Pennyroyal was well underway in development of their original concept, when according to co- founder Ross Hutchison, they were met with an opportunity to partner with someone that could not be ignored. “When the best of the best wants to work with you, you change plans – you find a way,” Hutchison said. “We have been incredibly blessed by a unique and special opportunity, not only for Pennyroyal Distillery itself, but also for our third party partners and the community,” said co-founder Daniel Griffith. “It is not Pennyroyal’s intention to be just another distillery but, instead, will be putting out the best whiskey on the market.” Pennyroyal has been hard at work making this transition. Originally, the campus was announced to be an $8.5 million investment in a 40-acre site. Pennyroyal Distillery now expands that footprint to an approximate $25 million investment into 60-acres, – adding a distillery building centered around a 32” copper column still and its new legendary partner. “When we originally set out, I was against the idea of having a distillery as a part of our model. I didn’t want to be a part of creating average whiskey. However, this opportunity we’ve been given will allow us to provide our third party partners, with a great stock of whiskey to help develop their brands with as well as Pennyroyal Distillery brands. The concept stays the same but now we add in-house distillation” Hutchison said. According to the team at Pennyroyal, updates on both the master distiller and construction of the facility will be formally announced in the coming weeks and months.
